Baked Sweet Potato with Miso and Pecans

Ingredients
  

  • 1 Sweet potato
  • 1 Tbsp Red or White Miso paste
  • 1/4 cup chopped pecans

Instructions
 

  • Bakes Sweet Potato at 425 degrees for one hour
  • Cut open sweet potato and divide Miso in half and mix into both sides of potato like butter
  • Add chopped pecans on top
  • Serve with roasted cauliflower and a side of mixed berries
