Grilled Corn Salad

Refreshing cool corn, red onion, avocado salad

- 1 bag sweet corn organic
- 1 1/2 red onion sliced thin and cubed
- 2 avocado Cubed
- 2 limes juiced
- 1 red or yellow pepper optional
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin add more for personal taste
- 1 tsp smoked paprika
- 1/4 cup cilantro
- salt and pepper to taste
- 1 Lb cherry or grape tomatoes halved organic
cast iron skillet over medium heat. Once hot pour bag of sweet corn onto skillet and spread out evenly. As it browns turn over. This should take about five minutes total depending on how brown you like it.
Place tomatoes, avocado, onion, spices, and grilled corn
Pour lime juice over mix in bowl and stir using a folding method
Taste and add more spices to personal taste. Put in refrigerator for at least an hour. Serve cold.
