Okra Onion Sweet Potato with Quinoa

Ingredients
  

  • 1 bag Frozen Okra
  • 2 medium Sweet Potatoes
  • 1 yellow Onion
  • 1 Tbsp olive oil
  • 1 Cup Quinoa

Instructions
 

  • Add olive oil to a pan medium heat
  • Add okra, onion, and sweet potatoes to oil and stir fry until sweet potatoes are soft. You may need to put a top on it for a little bit to cook through.

Quinoa

  • I use an Instant Pot recipe but you can bake or use a stovetop to cook it.
    Rinse off Quinoa
    It helps to add a little olive oil (1 tsp) to the sides to prevent sticking.
    11/2 cup vegetable or chicken broth to one cup of Quinoa
    pinch of salt
    Set it on High for one minute.
    Turn off and let it sit for 10 minutes. Carefully release the valve. Fluff and serve.
  • I like to add a thin version of the Miso/Mayo sauce
