Chia Seed Jam

I had PB&J every day as a child. As an adult, I quit because I never found healthy jam or nut butter. This jam is so easy and so good. Chia seeds give fiber and omega 3s. The nut butter I love is Kirkland Mixed Nut Butter is amazing. Since I discovered sourdough bread, I am as happy as a child eating PB&J again.
 

Ingredients
  

  • 1 lbs frozen or fresh berries
  • 2 tbsp real maple syrup
  • 2 tbsp chia seeds

Instructions
 

  • In a pot on medium heat, add the fruit, maple syrup and lemon juice. Simmer 5-7 minutes, stirring to break down fruit.
  • Using an immersion blender or potato masher to puree fruit, then turn off heat
  • Stir in chia seeds.
  • Place in a glass container and refrigerate to cool.
