Zucchini Onion Tomato Spaghetti Sauce

Ingredients
  

  • 1 Zucchini chopped into small cubes
  • 1 Onion Chopped into small cubes
  • 10 Cherry or grape tomatoes
  • 1 15 oz Organic tomato sauce
  • 1 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Organic Italian spices
  • 2 cups chickpea noodles
  • Parmesan cheese Optional

Instructions
 

  • In an electric skillet or cast-iron skillet, stir veggies in olive oil
  • Add tomato sauce and spices and heat to boiling
  • Bring sauce down to a simmer on low and cook while making noodles
  • Place chickpeas into boiling water and cook for about 8 mins, drain and rinse
  • Serve sauce on noodles
